It’s hard to rival the Colombian coffee to take intense heat, while still revealing such sweetness as we’ve done with this coffee. The name for this coffee comes from the request of the Assiniboine Park Zoo who was looking for “Polar Bear Coffee”. As is our style, we had to feminize it and were inspired by the North Star, the Ursa Major, which is known as the “Great Bear”. She’s the third largest constellation and is seen in the Northern Hemisphere. With any luck, this coffee will be associated with its' mythology.
